I originally planned to make this for Thanksgiving but ran short on time before going to the family dinner. Earlier tonight I decided to go ahead and fix it. What a wonderful midnight snack. 😉 LOL
Modeled after the recipe below, but my potatoes were larger so I adjusted the ingredients on the fly, plus added a lot more cinnamon because I like cinnamon. I had to fill in the top with mini marshmallows because I had too much for the smaller casserole dish and the big bag did not cover completely.
Pretty much, it tastes like a great big loaded baked sweet potato like you would get at a steakhouse, but a little richer and sweeter. 😉

This is exactly HOW TO use marshmallows on this dish. I make yams like this. I'm always disappointed when I go places to eat and see only a few marshmallows ha ha This looks amazingly delicious!!
My mom would enjoy that. We haven't made them in years. I think she's the only one who liked them.

My mom doesn't have a sweet tooth, and the rest of my family doesn't like marshmallows…

I had to clean my oven after mine. Half the marshmallows overflowed onto the rack and bottom.
Definitely worth putting on a cookie sheet. 😉
